Method
- Chop the melon into small chunks and remove any seeds or rind. You can also blend the melon, but I prefer to have chewy pieces.
- Combine melon, parsley, and honey, and mash everything a bit with a fork.
- Add water and mix until the honey is evenly combined.
- Pour the mixture into silicone molds or ice cube trays.
- Freeze for 4 hours.
Notes
You can totally mix things up, go with honeydew like I did, or try cantaloupe, watermelon, or even peaches for a refreshing summer twist!!
